Alderaan Hospitality is a full service restaurant and bar development and management firm spearheaded by Morgan Watson and Jason Clifford. Since 2020, Alderaan has led food and beverage operations for Victoria’s DoubleTree Hilton, overseeing the relaunch and management of Bartholomew's Public House, and creating Stone Ground Pizza Company and Humboldt Bar.

Bartholomew’s Public House
Bartholomew’s Public House, known affectionately as Bart’s, has been an institution in the Victoria bar scene since 1975.
Having undergone many changes over the decades, one constant has remained the same – great food, fantastic drinks, friendly service and a lively, welcoming atmosphere.
Today, we take great pride in offering one of the best pub experiences in the city. Our kitchen team deliver authentic fresh pub classics as well as modern bar favourites. The bar is currently running 27 taps of rotating craft draught beer as well as boasting the largest gin selection on Vancouver Island. Our extremely skilled and knowledgeable bartenders are some of the best in the city and are more than happy to create you a bespoke cocktail designed to your tastes or serve one of our custom house creations.
Humboldt Bar
An intimate cocktail bar in the heart of downtown Victoria inspired by the life and work of Alexander von Humboldt, the 19th century German naturalist and polymath who influenced our modern concept of nature and forever changed the way we understand the natural world.
Stone Ground Pizza Co.
Founded in 2021 at the DoubleTree by Hilton in the heart of downtown Victoria, Stone Ground Pizza Company creates classic, Italian style pizzas and fresh pastas using the best, locally sourced ingredients available. To deliver our vision, we invested in a state of the art, stone-fired pizza oven which is the true core of our business. Every crust is freshly rolled to order, never frozen, never pre-prepared.
